A foudre is like a barrel, but much larger and made to last much longer. A true companion in the cellar, it accompanies the wine through patient, respectful ageing.
Foudres offer many advantages for ageing wine. Thanks to their large size, the ratio between wood and wine is lower than in a barrel, which helps preserve the original aromas and all the freshness of the fruit.
Their natural breathing encourages gentle micro-oxygenation: a small amount of oxygen passes through the wood, softening the tannins and giving the wines rounder, silkier textures.
The foudre creates a subtle balance. It limits the aromatic influence of wood and gives greater emphasis to the grape variety and the terroir. Finally, these majestic vessels are designed to last.
Often a century old, they can accompany several generations of wines and offer a unique continuity in style and quality.

Once the red wines have been racked from the foudres, they are brought together in stainless steel tanks for blending. This choice allows us to work in a neutral environment, without the influence of wood, in order to fine-tune the balance of the wines.
